5 takeaways from today's De Volkskrant's pretty clear deep dive in precision fermentation 🖐️ 🌵 In 6 years, the new dairy it's expected to be 2x cheaper than cow's dairy 🌵 Dairy will still be produced by 'animals'- but they're microbes instead of cows 🌵 To brew dairy instead of farming it, you need only 5% of the farmland 🌵 Evaporating all nitrate, manure & biodiversity issues like dewdrops on a hot summer's day 🌵 And what about our grassland farmers? Their role will change. But as we see it, for the better - and we have regular conversations with several of them. They've always been the keepers of the land, and now they can fully step into this role, letting the land rewild and flourish while providing us all with the fruits of healthy, organic methods. And that includes feeding some wild grass harvests to a small herd of stainless steel cows. Credit where credit is due. Just like rock'n'roll wasn't invented by Elvis, but by a feisty black lady, Aunt Rennet paved the way for cow-free cheese more than 50 years ago. Thanks to her, most cheeses today are vegetarian. In the coming years, Margaret will complete her work and make them vegan. It will make cheese not only friendlier but way more sustainable, healthier and more affordable in the end, without giving an inch in terms of taste. THE EMPIRE EXPANDS⭐ CHIEF COWBOYS WANTED ⭐ 2024. A year that would go down in cowboy history as a landmark of building, expanding and the dawn of the future of cheese... Because in that year, our Margaret made history: the first stainless steel cow produced real casein with micro-organisms instead of an udder. Her first cheeses lay a-ripenin’, huge stable building plans were blueprinted, and Those Vegan Cowboys had become news yet again with a collab that doubles their lab prowess to the most powerful R&D team in precision fermentation world wide. Everything was about growth now. Big stables. Big team. Big plans to become reality in months, not years, which would turn this bunch of science-y renegades into a full blown commercial, mass-producin’ cheese factory. It would make Those Vegan Cowboys an entirely different animal. It seemed a normal, even quiet morning at the ranch. But bees were a-buzzin’ under three straw Stetson hats. Being a bunch of self-made cowboys, chief ‘The Indian’ Hille, Sheriff Will and ‘Two Faced’ Belinda were used to just rollin’ up their plaid shirtsleeves and get goin’. But another thing they have in common, is a healthy sense of reality. Hille downed the last dregs of her morning coffee and broke the silence, stating what each of them was already thinkin’. ‘For the adventures ahead, we need to get a darn great couple of chiefs on board. I’m thinking ‘three musketeers’ here. But with the pioneering spirit of the vegan cowboy.’ Exactly 23 minutes later, the sharp tack of Belinda’s 38 caliber staple gun could be heard all over the ranch. €15M HERD BUILDING PLANS REVEALED – NOW OPEN TO INVESTORS In 2024, we’re building a big milk stable for the first herd of stainless steel cows the Lowlands have ever seen. And for the first time in Vegan Cowboy history, investors can build with us. Carpentry skills appreciated but not necessary. 👉🏽 WHY NOW? Because it works. Now that we have Margaret’s cheese, we want everyone to have it. To make this happen, Margaret and her stainless steel herd need a bigger stable. Or production facility, but that doesn’t sound as fun. 👍🏽WHY… NOW? Mother told us not to bet with other folks' money. Thanks to their previous success with The Vegetarian Butcher, founding cowboys Jaap Korteweg & Niko Koffeman could afford to politely decline when investors offered to join in the early days. Back then, this whole cow-free precision fermentation casein thing had about a 1% chance of success. Those wild plans came true. Now that we have the first kilos of cheese ripening, it’s time for a major scale up. Still an adventure of course. But one on which we’re confident enough to invite others along. We are raising €15 million. 🐄 WHY ISN'T THIS CROWDFUNDING? We’re all for the concept of crowdfunding. Right now though, it's not the best fit for our mildly megalomaniac stable-building plans. 🌵 SO.
